6-8 apples, peeled, cored and diced
2 teaspoons lemon juice
2 teaspoons tapioca pudding granules
3/4 cup white sugar
1 tsp cinnamon
pie crust dough for 2 crusts
In saucepan over medium heat place apples, lemon juice, tapioca, sugar and cinnamon. Cook until fruit is tender and thickened. Stir frequently to avoid scorching. Meanwhile roll one pie crust in pie plate. Pour in fruit mixture. Cover with remaining pie crust.
Smoke on Good-One Smoker with indirect heat. Add one piece of fruit flavor wood. Use low smoke.
Pie is finished when crust is golden brown.
