Pineapple Pico de Gallo Smoked Pork Loin

  • 1 medium sized jalapeno finely chopped

  • 1/2 large onion finely chopped

  • 1 fresh lime

  • 2 tbsp finely chopped cilantro

  • 1/2 of fresh pineapple finely chopped pork loin

  • 3-6 slices uncooked bacon


Place lime in a lime press and squeeze out all juice and meat of the fruit into bowl.  Add remaining ingredients.  Toss. Allow to set at least one hour prior to use.

Flatten out pork loin.  Add pineapple pico de gallo directly on to pork loin.  Roll carefully.  Wrap pork loin with bacon.

Place on Good-One Smoker, heated with charcoal and 2-3 pieces of flavor wood of choice.  Smoke until internal temperature reaches 175 degrees Fahrenheit.
