Tequila Roasted Corn Salad
Ingredients:
4 ears fresh sweet corn
1/2 red onion, diced small
1 medium red bell pepper, diced small
1 jalapeno, seeded and minced
1 pint cherry tomatoes, halved quartered
4 cloves garlic, minced
1/3 cup fresh cilantro, roughly chopped
2 limes zested and juiced
1 TBS quality tequila
2 TBS extra virgin olive oil
3/4 tsp ground cumin
1 1/2 tsp kosher salt
1/2 cup crumbled feta cheese
Instructions:
1: soak and roast corn on smoker at 400° cook until tender, pull back the husks and add grill marks to the corn. Then remove from smoker and cut off the cob.
2: dice veggies and put in a bowl mix in lime and Tequila last salt to taste. Place in cooler until ready to serve.
